What should I do if I get a better offer after paying the deposit to one school?

I am under the impression that deposits for most universities are nonrefundable so I would just consider it a sunk cost. You could also try reaching out to the school you paid to see if they can help you out in getting a refund
 
How much is the deposit and what is the policy regarding the deposit?
I would assume it's nonrefundable but you have nothing to lose by inquiring about it. Worst case they will say no.
If you are pretty sure about your choice of taking on the better offer, it's wise to proceed with caution since it's bad taste to change your mind again.

It's non-refundable. I am not sure if the better schools will give me offers.
