How are the universities in Canada and UK as compared to universities in US, in terms of job prospects and program structure?

You can't compare programs across continents because their graduates primarily work in their respective financial centers, be it the City, Wall Street or Bay Street. Even among US programs, the structure is different so you really have to do one on one comparison between your interested programs.
