For those who are in or have completed MFE programs, what is the internship search like? If you're starting in the fall and the program ends in roughly a year, wouldn't you need to find an internship as soon as you enroll? How can you even leverage a MFE that early in the program?

Yes. The internship search starts the first day in the MFE program. Programs will a good placement service will help you with resume, job search, interview prep, alumni networking, etc. A lot of people found internship on their own but the good ones are via networking.
When my program started, I printed out and took with me an outline of my program's course curriculum to interviews. This way I could tell them what I would know by an internship start date in the summer. The search is full-on, and applying early will save you from extra stress when school starts to get heavy.
