How are my chances for MFIN/MFE in the US? Should I still take GRE

Currently applying to top US quant programs like Princeton, MIT, Columbia, NYU, CMU (I would like to work in the US).

3rd year at top 5/6 UK university.

Worked part time and full time as QT intern at a trading firm based in HK/SG where ran strategies on 10M USD of the firm's money. Confident I will get strong letter of recommendation from my boss - head of trading. Received return offer but I want to go to the US.

Did part time research alongside degree (no published paper though).

First Class Honours Degree (72%)

Many of the programs I am applying to are test optional? Should I still try my best to take the GRE??
 
Yes, take the GRE and see how you perform. If you get a good GRE Q, report it to those programs.
Remember that a 169-170 Q does not say much about how you will perform in these programs, so GRE is not a critical factor for many adcoms.
You have good and relevant work experience. They will need to evaluate whether you have a strong math/programming/stats background to handle the coursework while doing job interviews during your first semester.
