How many internships would you say I need to be a qualified candidate for MFE?

Like, would one good/ok SWE internship in a finance bank (like chase of huntington ) be good for me considering I'm a CS major? I will also stay on top of projects/research
 
You don't need an internship to apply to MFE programs but having one, a relevant one is better, would be an edge for admission to competitive programs.
It signals that you can handle the interview process successfully.
