I'm soon graduating with a BBA in Finance but have self-studied Math on the side up through Stochastic Calculus and Linear Algebra. What would be the best way to show this on a resume?

You can list those under Courses Taken section. However, depends on which jobs you apply to, Linear Algebra may impress very few people. And if you list Stochastic Calculus, expect to be grilled on it.
Better yet, list technical projects that you have done, for example, a coding project.
This advice gears toward technical/quantitative positions but with a BBA in Finance, you may have a different career path in mind.

Thanks, Andy. Career I'm interested in is trading, but with all the tech/mathematical advancements in the field I want to have those skills in my arsenal.

Put it in your cover letter and ask to get grilled on it =). If you have any written work, don't be afraid to scan it/submit it as attachments.
