What should I finish my degree in

Currently at Auburn University and almost finished with my program so transferring to a school better suited isn't an option.

I have been eyeing trading/quant trading since the beginning of my academic career (many moons ago). Initially I was an actuarial science major for a while, but changed majors due to conflict of interest and turn in life. Long story short I can finish in 3 semesters with a degree in finance and choose a masters program, or I can stay in school a little longer and finish with something that would help my in my future quant career. My plan is to finish out my degree in Finance and Fine art (I know, completely opposite of stem) and do a minor in applied math. Over the year I have had an interest in trading electricity.

Any advice on what I should do?

you could certainly trade on your own and have a record, then show that to a quant employer. it'll be pretty hard to get in without having a non-hard STEM degree

My suggestion would be to switch back to actuarial science and drop fine arts and finance. Take electives in computer science (R, C++ etc), applied mathematics (ODE, PDE, Optimization etc), statistics & probability (not covered in actuarial science) and pure mathematics (Analysis). Actuarial science might be your fastest route to get a degree and pursue graduate studies or/and work since you already have credits in that discipline.
