I'm in a job where I have access to learning new areas of math. What would you say are the two most marketable areas for getting a job in the quantitative analyst arena?

I know a couple of years ago, it was finite elements and signal processing.

There isn't going to be an answer for "best/hottest" kind of question. And frankly nobody knows the answer. If the answer is obvious, people would be all over the subject.
Timing for the next best thing has proved to be a fruitless pursuit. My only advice is to hone your technical skills, learn a new language, read new books, meet new people. You have better chance of being at the right place, right time doing that.

It's better to clarify which area you are intending to get in and that'll make easier to seek the direction of math and programming to follow. ;)

With all due respect, it is the wrong question.
If you've mastered core Quant maths then you should identify those areas where you are better than most other people.
