I'm an undergrad student going into my senior year. I know most internships are for the summer between junior and senior year but i'm just wondering if it would be a waste of time to try and get one the summer after i graduate before heading into grad school? does it matter a whole lot of what your age is when applying for an internship?

The answer to both is no.
Internship is invaluable because it can be a career changing event: you may find out the working hours and the work aren't what you always thought of. On the other hand, it will help you confirm and focus on what you want to do.
