If I am able to choose only one of the courses between Partial Differential Equations and Introduction to Mathematical Modeling, which course do you thins is a better beneficiary in my pursuit of a quantitative finance education ?

Depends on in which quantitative field you are going to pursue your future career.
PDE is more concentrated subject than mathematical modeling. Many complex financial problems in pricing and hedging are making use of PDE and are required (as MUST) for many quantitative fields. If I had a choice like that Id personally choose PDE.
